Ingredients
- Jap Pumpkin 1/4
- Spinach 250g
- Broccoli 1small head
- 1 handful each of Walnuts, pepitas, sesame seeds toasted
- Dressing of 3 Tbsp sesame oil, juice of 1 lemon, 2 tablespoons minced garlic & 3 Tbsp Kewpie mayonnaise
- Kewpie mayonnaise to top
Method
- Peel, chop & roast pumpkin for 30 mins.Wash & chop broccoli into small florets- toss in sesame oil and fry for 5 minutes.Wash spinach.
- Dressing- Combine sesame oil, lemon juice, garlic and kewpie in small jar and shake. Set aside.
- Toast nuts and seed in fry pan until golden.
- Combine all ingredients and top with Kewpie mayonnaise to taste. Enjoy
