Ingredients
- 3 tbsp neutral oil
- 1 can coconut milk
- 1 small jar Thai red curry paste
- Coriander and spring onions (to garnish)
- 500gm pork mince
- 200gm tofu (firm)
- 3 tablespoons squid fish sauce
- Clove of garlic (minced)
- Chilli (for those who don’t mind the heat!)
Method
- Heat wok on medium heat and add oil. Once shimmering, add pork and minced garlic.
- Stir fry pork until lightly browned. Add coconut milk, Thai red curry paste, fish sauce and stir until combined.
- Add tofu and simmer for ten minutes.
- Serve with Jasmine rice and garnish with spring onions and coriander. Add chilli for an extra kick!
