Ingredients
- 1 cup sushi rice
- 2 tbs sushi rice seasoning
- 250g chicken thigh
- 4 eggs
- 1/4 tsp dashi in 1/2 cup water
- 2tbs soy
- 2tbs mirin
- 2tsp sugar
Method
- Cool sushi rice and add sushi seasoning
- Thinly slice chicken thigh and soft scramble the eggs in a bow
- In a small pan mix dashi, soy, mirin and sugar. Heat until dissolved
- Add in the chicken thigh and cook for 8mins
- Add half your egg mixture to cook
- Once all cooked add second half egg mixture and turn off the heat. Egg should remain runny
