Ingredients
- 40g thick noodles
- 3 cloves garlic (crushed)
- 3 grams ginger (grated)
- 300g tempeh (cubed)
- 1 zucchini (sliced)
- 1 red capsicum (sliced)
- 165mls coconut milk
- 30g peanut butter
- 20mls lime juice
- 5mls maple syrup
- 10mls tamari
Method
- Cook noodles according to package
- Heat pan & cook garlic & ginger for 3 mins
- Add tempeh & cook 5 mins
- Add capsicum & zucchini & cook another 5 mins
- Make sauce: mix together coconut milk, peanut butter, lime juice, maple syrup & tamari
- Pour sauce into pan & bring to slow boil
- Add noodles & mix to evenly coat & combine
- Serve & enjoy :^)
