Ingredients
- Kewpie mayo
- Rice wine vinegar
- Soy sauce
- Sesame oil
- Sesame seeds
- Tofu (firm)
- Natural peanut butter
- Honey
- Coriander
- Carrot
Method
- Cut tofu into chunks. Mix marinade of 2tbs natural peanut butter, 2tbs soy sauce, 1tsp sesame oil. It should resemble a thick paste - mix through tofu and leave to marinate. You can marinate for minimum of 10 minutes or for as long as a few hours.
- Boil soba noodles for 4 minutes and then drain and rinse with tap water briefly. Let cool.
- Mix salad dressing with 1/4 cup kewpie mayo, 2tbs toasted sesame seeds, 1tsp sesame oil, 2 tbs soy sauce, 1tbs honey.
- Prepare salad ingredients by washing and tearing coriander and thinly slicing carrot.
- Fry tofu in neutral oil til golden.
- Mix together cold soba noodles, salad ingredients, sesame kewpie dressing and top with peanut tofu chunks. Ready to serve with extra dressing to drizzle on top!
