Ingredients
- 300g mushroom of choice (oyster, king or shinmeji)
- 2 cloves of minced garlic
- 2 tbsp of soya sauce
- 1 tbsp of mirin
- Salt to taste
- 1 cucumber
- 1 spring onion
- Gem lettuce
- Coriander
- Hoisin sauce
Method
- Wash lettuce, cucumber and coriander
- Slice cucumber, spring onion into thin slices length wise
- Heat oil in sauce pan and sauté minced garlic
- Add in mushroom and stir fry for 2 minutes
- Add in soya sauce and mirin and stir fry for 2 mins
- Add some salt to mushrooms and stir fry for another 1 minute
- Take mushroom off heat
- Arrange a few gem lettuce on a plate and on each lettuce put 1/2 tsp of hoisin sauce and spread across the lettuce
- Place mushroom into lettuce and garnish with cucumber, coriander and spring onion
