- Get this easy mid week recipe started by adding chopped garlic, onion and ginger and olive oil to a sizzling pan. Next add your favourite veggies— I like broccoli, buok choy, carrots and tomato but you can add whatever veggies you want! Sauté for a few minutes, then add your curry paste and mix around. Next add coconut milk and simmer on low for 10 mins or so. Serve with brown or white rice and garnish with coriander and you’ve got yourself a delicious meal in 20 mins or less.
