- Buck choy
- Chilli flakes
- 🧄 garlic
- Onion
Method
- Salt eggplant for 10 mins. . Rinse & pat dry then shallow fry with garlic and onion and ponzu sauceAt same time boil Udon noodles& then drain.
- Place browned eggplant cubes on paper towels to blot oil.More sesame oil, quickly fry buck choy & add chilli&salt& pepper .Combine all ingredients clients back in wok, stir through& serve.
