- Cut the tofu and marinade in the garlic, ponzu, soy, lime juice, lemongrass, ginger and coriander for a few hours. Cut the vegetables into small pieces. Soak the noodles for a few minutes in boiling water then drain. Fry the onion and garlic in coconut oil until browned, then add the tofu until crispy. Pour the marinade over and add the hard vegetables until they are cooked , but still with a bit of bite. Lastly add the soft vegetables and noodles. Mix well and add extra ponzu and soy. Serve straight away. Also nice with egg stir fried in to the mix.
