Ingredients
- Valcom Curry Paste Thai Massaman 210g
- 2 tbsp neutral oil
- 900g Beef Oyster Blade Roast (cut into large chunks)
- 5 small potatoes
- 1 onion
- 1 bunch broccolini
- 1 red chilli
- 400g coconut cream
- 1/2 cup water
- Coconut rice (to serve)
- Peanuts (to serve)
Method
- Cut beef into large chunks and brown each side in your pressure cooker with oil. Remove and set aside.
- Cut onion into large chunks and add to pressure cooker. Cook until translucent.
- Add beef back into pressure cooker with whole jar of massaman curry paste, coconut cream and water. Secure lid and pressure cook for 30 minutes.
- Cut potatoes in half and add to pressure cooker. Replace lid and cook for a further 5 minutes.
- Steam broccolini.
- Done! Serve with coconut rice, sliced red chilli and peanuts.
