Ingredients
- 500g pumpkin
- 750ml chicken stock or water
- 2 tablespoons Tom Yum Paste
- 400ml coconut milk
Method
- Peel and dice pumpkin, discarding seeds.
- Bring water/stock to boil and stir in Tom Yum Paste, then pumpkin.
- Simmer till pumpkin is tender, add coconut milk.
- Blender the ingredients.
- Serve with a dash of fish sauce or salt, and a little lime juice. Can scatter basil leaves over the top when serving.
