Ingredients
- 2 cos lettuce
- 6 bacon rashers
- 6 boiled eggs
- 6 slices of bread
- Shaved Parmesan cheese
- Kewpie mayo
- Oil or butter
- 3 chicken breast diced or 1 roast bbq chicken.
Method
- Rip up cos lettuce and rince clean. Set aside.
- Boil eggs for 8-10 minutes or to your liking. Or if you have a thermomix cook eggs in there.
- While eggs are cooking dice bacon and fry in fry pan until golden, set aside.
- Dice bread slices and fry in a little butter or oil in fry pan until golden and crunchy. Alternatively you can put them in the air fryer to crisp.
- Dice chicken breast into medium pieces and fry in a little oil in fry pan until cooked through. Peel eggs and halve.
- To serve place cos lettuce in bowls, top with chicken, bacon, egg halves, bread cubes (croutons) and shaved Parmesan. Drizzle over Kew pie mayo and serve. Enjoy!
