Ingredients
- 4 chicken schnitzel
- 4 cakes of instant noodles
- Golden curry mild Japanese curry mix
- 1 bunch bock choy
- 2 spring onions
- Mayonnaise
Method
- Place schnitzels in air fryer for 12 mins at 200 degrees
- Fill 2 saucepans with - one 1/3 full the other 2/3 and set to boil
- Once boiling add bokchoy to 1/3 full saucepan and add curry cubes to the 1/3 full. Boil both for 6-8mins stirring the curry sauce as much as possible.
- In between stirring thinly slice spring onions and set aside
- Remove bock choy from saucepan and replace with instant noodles
- Turn schnitzels in air fryer and cook for another 3 mins
- Once cooked distribute noodles evenly between bowls. Top with the bock choy, sliced schnitzel and curry sauce evenly.Drizzle with mayo and sprinkle spring onions - enjoy!(Add some fresh chilli, sriracha or sambal for an extra kick)
