- Diced chicken (seasoned with Tumeric)
- Zuccini, Capsicum, Carrot (zoodle style)
- 1/2 Jar of Yellow Curry Paste
- 1/2 can Coconut Milk
- Fresh grated ginger
- Brown Jasmine rice to serve
- Coriander and Broccoli to serve
- Season the diced chicken with tumeric and flour
- Prep vegetables by cutting as desired. (zucchini and carrot noodles, sliced capsicum)
- Brown chicken in wok with a tablespoon of coconut oil and fresh grated ginger.
- Add vegetables, coconut milk and yellow curry paste to wok and bring to boil.
- Simmer for 5 minutes and serve with Brown Jasmine rice. Add coriander and steamed broccoli on the side.
