Ingredients
- Quinoa - 1 cup
- Spinach (baby) x 500 grams
- Cherry tomatoes x 1 punnet
- Mango x 2
- Avocado x 2
- Slivered Almonds x 1/2 cup
- Pumpkin (butternut) x 1
- Kewpie sesame dressing
Method
- Wash quinoa, cover with water and bring to the boil for approx 10 mins (until quinoa is soft and coils open)
- Cost pumpkin in oil, salt & pepper and Roast pumpkin until caramelised
- Slice tomato, cube avocado and cube mango
- Fry almonds until brown
- Combine all ingredients in a bowl and dress with sesame kewpie
