Ingredients
- Chicken thigh cubed
- Valcom red curry paste 4 tablespoons
- 1.5 Capsicums cubed
- 2 cups Snow peas
- 1 Onion diced
- 4 Garlic cloves minced
- Half teaspoon Ginger
- Handfull of Basil chopped (& some to serve)
- 2 tins of coconut cream
- 2 serves of hokkien noodles
Method
- Heat oil in a panCook onion, garlic and ginger until onion is translucentAdd Valcom red curry paste, cook for 2 minutesAdd chicken and cook until brownAdd the coconut creamBring to boil then let simer for 2 minutesAdd snow peas and capsicum, cook until snow peas are just rightAdd hokkien noodles
