Ingredients
- valcom red curry paste
- valcom kaffir lime leaves
- 500 gram pork fillet
- can coconut milk
- 250 grams chopped butternut pumpkin
- half a pack of mini cucumbers
- 1 onion
- 1 red capsicum
- tube of chilli paste
Method
- Chop onion, pumpkin, caps Put in large pot Put fillet along side
- Cook for 30 mins -I Take out pork fillet and slice into chunks- slightly bigger than you can eat keeps them from being overcooked n oven on 180 degrees
- Pour in coconut milk- add pork back and add three heaped teaspoons of red curry paste
- Cook for another 30-45 mins and stir
- add to bowls and top with chilli paste to your level of what you like
- enjoy!
