Ingredients
- 1 serve Hakubaku organic soba noodles
- 1 egg - boil for 5 minutes
- Cucumber thinly sliced
- Sesame seeds for garnish
- Spring onion for garnish
- 1/4 cup soy sauce
- 1/4 cup mirin
- 1/2 cup stock (vegetable or chicken is fine)
- Optional for extra umami - 1/4 cup dashi
Method
- Boil noodles for 3 minutes then dunk in a ice bath to keep it cold
- Boil egg for 5 minutes and peel - yolk should be slightly runny
- Slice cucumber and spring onions to finish
- Add soy sauce, stock, mirin and dashi into a bowl and mix. This is your dipping sauce
- Assembly noodles, toppings, egg and you are done! Dip noodles into the sauce as you go. A refreshing noodle dish for hot summer days!
