Roast vegetable medley

Ingredients

Sweet potato
Beetroot
Carrots
Olive oil
Garlic
Capsicum

Method

Wash & chop vegetables to desired size.Drizzle with oil & season with salt and pepper.Place in preheated oven for 30 mins until tender.Drizzle with Kewpie mayo and tonkatsu sauce. Mix through rocket or iceberg lettuce and serve.
