Ingredients
- Obap Sweet Potato noodles
- 1 large Eggplant
- 1/2 red onion sliced thinly
- 1/2 cup carrot julianned
- 1/2 cup daikon radish juilanned
- 1/2 cup finely sliced red cabbage
- 1/2 lebanese cucumber, skin on deseeded, finely sliced
- 2 long red chilli finely sliced (or less to taste)
- 2 spring onions finely sliced
- Bang Bang Sauce -
- 1/2 cup Kewpie mayo - or your favourite mayo
- 1/4 cup Lee Kum Kee Chilli-garlic sauce
- 2 Tbls Extra Hot Sambal ABC sauce
- 1 Tbls Honey
- up to 1 1/2 Tbls rice wine vinegar
- Garnish - Coriander
- Olive oil, salt and pepper for roasting
Method
- Cut eggplant into rounds approx 2cm apart. Cut each round in half and each half into 3. You should have 6 pieces per round, and each piece should have some skin on.
- Place on lined baking tray and season with salt and pepper. Sprinkle with olive oil and give a good toss to coat. Spread out and bake at 180 C until tender and skin looks a little chared. Remove from oven and let come to room temperature. Depending on your oven can take 20-30 mins to cook.
- While the eggplant is roasting, prepare noodles as per packet instructions. - usually around 8 mins. You want to use the whole packet. Once cooked to your liking, drain and rinse in cold water. You want the noodles to be cold. They wont look like glass when cooled. Place into container or bowl and into refridgerator.
- Prep your salad while waiting for noodles and eggplant. Grate carrot and radish, slice cabbage, red onion & cucumber. Finely slice chilli and spring onions. Set some aside for garnish. Chop coriander for garnish if using.
- Make dressing: Place mayo, chilli-garlic sauce, sambal & honey in a bowl and mix well with fork or spoon. Slowly add up to 1 1/2 Tbs of vinegar. It is up to you how thin or thick you would like the dressing. Set some aside for extra to add to salad whilst eating.
- Assembly: Using the bowl the noodles are cooling in, pour some dressing onto noodles and coat well. You may add as little or as much as you wish. Transfer to serving platter. Layer salad ingredients on top of noodles evenly distributed. Top with eggplant.
- Drizzle more dressing over eggplant and salad. Garnish with coriander, spring onions and chilli. Serve with extra sauce.
