- Place the vegetables into a tray.Place 1/2 cup of soy sauce ( I used gluten free) and 1/2 cup of Mirin- toss the vegetables in the sauce Sprinkle over the top approx 1/2 cup of good quality olive oilToss vegetables into the sauce Place in a moderate oven for 20-30 until cooked through.Cool.Place avocado onto the rice before adding the vegetables.Use the vegetables to make Sushi that is vegetarian and gluten free
