Ingredients
- 800g skin off salmon
- 3 Lebanese cucumbers
- 1 punnet cherry tomatoes
- 1 capsicum
- 1 packet soba noodles
- 1/2 cup spring onions
- 4tsbp soy sauce
- 20ml olive oil
- 1tbsp grated ginger
- 1 tbsp minced garlic
Method
- Preheat oven to 200C. While oven is preheating, combine 2tbsp soy sauce, 1tsp garlic and 1tsp ginger, and pour over salmon to marinate.
- Chop veggies finely and toss, set aside. Place salmon in oven for 10 minutes.
- Boil water on stove. Meanwhile, combine olive oil with remaining soy sauce, garlic and ginger to create dressing.
- Cook noodles according to packet - strain after approx 4 mins.
- Combine cooked salmon, salad and noodles in bowls and dress with sauce. Serve.
