Ingredients
- 500g Salmon fillets
- 70g teriyaki sauce
- 200g snow peas
- Packet of soba noodles
- 3 spring onions
- 1 1/2 tbs rice wine vinegar
- 1tsp sesame oil
- Pinch of sugar
- Sesame seeds for serving
Method
- Preheat ovens 180°C fan forced. Line a baking tray and place salmon fillets on. Brush 2 tablespoons of the teriyaki sauce on the fillets and cook for 10 minutes or until cooked.
- Bring a pot of water to the boil and place soba noodles in the water.
- Pour hot water over snow peas and let rest for two minutes. Drain and cover with iced water to stop the cooking process. Trim The Snow peas top and tail and thinly slice. Finley slice spring onions
- Combine rice, wine vinegar, remaining teriyaki sauce and sugar.
- Put the noodles, snow peas, spring onions and salmon in a large serving bowl top with the dressing and combine. Serve and enjoy!
