Ingredients
- 2 pieces Skinless/Boneless Salmon Fillet
- 1/4 cup Obento Teriyaki Marinade
- *1 Avocado - skinned & thinly sliced.*1/2 cup shelled edamame beans*2 thinly sliced radishes*1 cup cooked rice stick noodles*8 lettuce leaves ( red / green Oak leaf ) *8 baby cucumbers - smashed with a cleaver - cut into 1"" pieces*1/2 cup finely shredded carrots*1/2 cup finely shredded red cabbage *8 pieces thinly sliced Lotus Root (fresh or frozen)*1 fresh lime cut in wedges*1/4 cup fresh coriander leaves*2 TSP black sesame seeds*2 TSP white sesame seeds* 1/4 cup sliced spring onion* 1 bird's eye chilli thinly sliced.* 1/4 cup cornflour / cornstarch* 1 1/2 Cup cooking oil ( vegetable/ sunflower)*1/4 TSP sea salt .* 1 tbsp fish sauce1 TSP Soy sauce1/2 TSP minced ginger1 tbsp sesame oil 2 tbsp sunflower oil 3 tbsp rice vinegar1/2 TSP minced garlic 2tbsp Mirin seasoning
- *1/4 cup Kewpie Mayonnaise*Additional Obento Teriyaki Marinade sauce
Method
- Place Salmon Fillet into a bowl with Obento Teriyaki Marinade - let sit 2 mins then flip over and let marinade a further 2 mins . Remove salmon from teriyaki marinade & place on heat proof dish & place in refrigerator while preparing other ingredients.
- Heat cooking oil to approx 170 Celcius - dust Lotus Root sliced with cornflour then place in hot oil until crisp & golden . Remove & place on paper towel.
- Place the following into a jar : fish sauce, soy sauce, minced ginger & garlic , sesame oil , 2 tbsp sunflower oil , rice vinegar & mirin ....cover with lid & shake until well combined. Pour mixture over the smashed cucumbers.
- Remove Salmon from refrigerator & sear with a blow torch just until flesh is scorched , then slice thinly
- Divide Into two serving bowls :*Cooked rice noodles * Lettuce leaves *Sliced avocado*Edamame beans*Smashed cucumber Salad*Thinly sliced radish*Finely shredded Carrot & Red Cabbage* Lime wedges*Crispy Lotus Root Chips*Thinly sliced Salmon Tataki*Drizzle additional cucumber dressing over serving bowl .*Sprinkle with additional sesame seeds , coriander & sliced spring onion.
- Serve Kewpie Mayonnaise & additional Obento Teriyaki Marinade sauce on the side for dipping.
