- 6 chicken thighs3/4 cup roasted peanuts 400ml can coconut milk 2 tbs Valcum Authentic Thai red curry paste
- Preheat oven to 180 fan forced. Place peanuts into food processor and blend until finely chopped. Add coconut milk and curry paste to mixture and whisk. Add mixture over the chicken thighs in a roasting dish and cook for 30 minutes. Serve with rice.
