Ingredients
- 500 grams beef or pork mince
- 1 diced onion
- 3 cloves garlic, minced
- 1 carrot diced
- 3-4 Tbsp Kewpie sesame soy dressing
- Small can corn kernel
- 5 stalks green onions
- Rice vermicilli, prepared per instructions
- 3-4 baby cos lettuce
- Cooking oil for sauteeing.
Method
- Prepare vermicilli noodles per packet instructions.
- Heat oil in a medium pan.Sauté garlic and onion until cooked.
- Add beef mince. Cook over medium heat stirring occasionally.
- Add carrots and corn.
- Add kewpie sesame soy dressing. Adjust amount according to liking.
- Let simmer for another 2-3 minutes or until all ingredients are cooked. Season with salt and pepper.
- Prepare cos lettuce by carefully removing leaves from core.
- Using thongs or fork, put some noodles into a leaf of lettuce and drizzle with kewpie sesame soy dressing. Top with the cooked mince and top with spring onions. Can use coriander too if preferred.
- Repeat with the remaining lettuce. Enjoy!
