Ingredients
- Valcom Authentic Thai Massaman Curry Paste
- 4 large white washed potatoes quartered
- 6 whole washed carrots
- 3 garlic cloves sliced
- 2 tspns beef stock powder
- 800gm beef rump roast
- 1 can coconut cream
- 1 can chopped tomatoes
- 1 tbspn worcestshire sauce
- peanuts
- baby spinach
- 2 brown onions diced
- juice from half a lemon
- dried chilli flakes
Method
- Place all ingredients (except baby spinach) in slow cooker
- Add water until ingredients are covered and stir to combine
- Set slow cooker to auto and leave for 6 hours
- Serve in a bowl and garnish with peanuts and baby spinach
