- *500grams cubed beef* 1 jar Authentic red curry paste* 2 cans of Coconut milk* 3 Lemongrass stalks* 1 tbsp Ginger and garlic minced* 2 Diced onions* 5 Kaffir lime leaves *Water, salt, sugar as needed* 1 tsp Fish sauce* 1 red Chilli * juice of one lemon or lime
- 1. Brown the meat in batches, set aside2.Fry onion, ginger and garlic, add lemongrass, Thai paste, chilli until fragrant 3. Add coconut milk, kaffir lime, fish sauce and meat.4. Let it boil uncovered for two hours, mixing every now and again, adding water if required. Don’t let it stick to the bottom!5. Once the oil splits, and the meat is tender, it is ready! Add salt, sugar, more fish sauce to taste. You can also add a splash of lime or lemon juice. Serve with plain rice.
