Ingredients
- x4 Chicken Thigh with skin
- Oregano 2tsp
- Salt & Pepper to taste
- Olive Oil 2tbsp
- Capsicum
- Button Mushroom 150g
- 3 Carrots
- 1 Onion
- 6 cloves of Garlic
- Kecap Manis Soy Sauce 1/2 cup
- Sweet Chili Sauce 1/4cup
- Mustard 1 tbsp
- Lemon Juice 2tbsp
- Preferred Cooked Rice 500g
- 4 sprigs Chives sliced
Method
- Dice all veg
- Place diced veg into a bowl the the 4 chicken thighs, left on bone.
- Combine Salt, Pepper and oregano to chicken and veg and mix then place into slow cooker.
- Mince garlic and combine with Olive oil, sweet chili, mustard, Kecap Manis soy sauce, and Lemon Juice, mix.
- Pour the sauce mix over the chicken and veg mix.
- Cook on high 5-6 hours.
- Place desired portions atop rice in bowls, garnish with chives and serve.
