Ingredients
- Cucumbers 2 long Lebanese
- 2 tsps sesame oil and soy sauce
- 1 whole lime use the Lime juice and 1.5 tbsp rice vinegar
- 3/4 tsp Salt / good pinch of sugar
- Fresh ginger grated couple of teaspoons
- Small handful fresh Coriander and chopped green onion
- Extras if you want to add Red Capsicum or change garlic instead of ginger depending on personal taste and sesame seeds toasted
Method
- Smash cucumber , chop up and add to bowl with the salt mix up then sit for 20 minutes after that drain off excess liquid
- Whisk all other ingredients except coriander and green onions together for dressing
- Mix dressing with drained cucumber then add coriander and green onions together. Depending on taste try the other ingredients listed in extras
