
Ingredients
- Hakubaku soba noodles
- 250gm tofu - firm
- 4 spring onions
- Chinese broccoli
- 4 radishes
- Mixed seeds of your choosing for garnishing
- Pickled ginger
- Thumb of ginger
- One lime
- Two teaspoons of soy sauch
Method
- Add lime juice and zest to bowl. Dice spring onions roughly and add. Add soy sauce and thumb of ginger roughly chopped. Add all to a blender and mix until runny.
- Cool soba noodles, following instructions on packet. Once ready, drain and run cold water through. Then combine with sauce from step one.
- In a small pan, add diced tofu and cook until brown on one side
- Add roughly chopped broccolini and cook for five minutes on medium. Add seeds and cook for a further 60 seconds. Then turn heat off.
- Combine soba noodles in a bowl - curl around fork to dish out. Combine with broccolini and tofu. Enjoy!
