- INGREDIENTS• 400g fresh green beans • 3 x birds eye chillies• 1 x clove garlic• 2 x TBS fresh lemon juice• 2 x TBS unsalted crushed peanuts• 1 ½ x TBS fish sauce• 4 x cherry tomatoes• 1 x TSP palm sugarCondiments/Sides• Cabbage leaves• Sliced cucumber
- METHOD 1. Wash and prepare green beans, cutting them into approximately 4cm size stems. 2. Peel the garlic clove. 3. Place garlic and birds eye chillies in a mortar and pestle. Roughly pound the garlic and chillies to combine – do not form a paste. Add green beans. Repeat the process – use a table spoon to help mix ingredients in the mortar. Add the cherry tomatoes and roughly crush with the pestle. Add fish sauce, fresh lemon juice, crushed peanuts and palm sugar. Continue to use the tablespoon to mix ingredients in the mortar to combine all flavours.4. Place on top of pre washed cabbage leaves and slices of cucumber. 5. Optional - Can be served with jasmine rice. TIP – Can add more fresh lemon, fish sauce, chillies, sugar – depending on flavour preference. When in season green papaya can be substituted for the green beans.
