- 600 mil canola oil
- 2 large firm Avocados
- 2 eggs
- 2 cups bread crumbs
- 1 cup plain flour
- 2 tablespoon milk
- 1 teaspoon Chinese five spice powder
- 1 1/2 tablespoon sriracha sauce
- 1 tablespoon Lee Kum Kee premium soy sauce
- 2 tablespoon tomato sauce
- 2 tablespoon sweet chilli sauce
- 1 tablespoon Lee Kum Kee premium soy sauce
- I thai chilli sliced and a squeeze of lemon juice
Method
- Remove avocado seeds an skins then slice avocados long ways to form wedge
- Mix eggs, milk, soy, sriracha, chinese five spice in a bowl until well combined
- Place flour in a seperate bowl
- Place bread crumbs in a seperate bowl
- Start heating oil in a small saucepan making sure oil is around 4cm deep
- Start making your wedges by first placing them in flour, then in egg mixer, then finish by crumbing them in bread crumbs
- Test your oil by sprinkling some bread crumbs in it, if they bubble your oil is ready
- In small batches fry your wedges until golden then place them on paper towel before plating
- Mix all sauce ingredient together to make sauce
