Ingredients
- 4 large chicken thighs
- 1 tablespoon olive oil
- 1 tablespoon red curry paste
- 1 can light coconut milk
- Handful each of broccoli, red capsicum, spinach
- 2 brown onions
- Teaspoon shrimp paste
- Teaspoon fish sauce
- 227g tin of Valcom water chestnut slices
Method
- Heat oil and red curry paste for 1 minute. Add chopped chicken thigh pieces and sliced brown onions with half of the coconut milk and simmer for 2 minutes.
- Add the rest of the ingredients with 3 cups of water.Bring to a boil and then simmer until cooked through.
