
Ingredients
- 500 gms cod (or any firm white fish)
- 1 cup ciabatta bread crumbs
- 1 cup Kewpie Mayonnaise
- 1 tbs garlic powder
- 1 tbs dried red chilli flakes
- 1 tsp lemon juice
- olive oil cooking spray
- 1 cup Kewpie Mayonnaise
- 1 tsp finely grated lime rind
- 2 tsp lime juice
- 2 tsp ground coriander
- 200 g beans
- salt and pepper to season
- fresh green chilies for garnish
Method
- Wash the cod or firm white fish, remove skin and cut into 3 inch pieces like a finger.
- Preheat air fryer to 180 C degrees for 5 minutes
- Sprinkle with salt and pepper.
- Spread Kewpie mayonnaise on both sides of fish.
- Mix together ciabatta crumbs, garlic powder, chilli flakes and lemon juice.
- Coat each piece of fish in the chiabatta spice mixture.
- Place in single layer in the air fryer and spray with olive oil cooking spray.
- Cook for 5 minutes on each side or until fish flakes easily
- While cooking, prepare the beans and lime and coriander mayonnaise.
- Put a saucepan to boil and add beans and boil for 5 minutes.
- Place the Kewpie mayonnaise, lime rind, lime juice, ginger and coriander in a small bowl.
- Season with salt and pepper.
- When the fish is cooked, plate up with the bowl of boiled beans and a side of lime and coriander mayonnaise. Garnish with fresh green chilli. Add your favourite dressing to the beans like soy and sesame oil.
- Serve immediately and eat while hot.
