
Ingredients
- 280g Fresh Chow Mein Noodles
- 3 tbsp Olive Oil
- 300g royal red frozen prawn meat (defrosted)
- 1 half cup sliced mushrooms
- One cup green beans (boiled for 3 minutes separately)
- 3 tbsp Lee Kum Kee soy sauce
- 1 tbsp worcestershire sauce
- 1 quarter tsp hot paprika
- Juice of one lemon
- Fresh coriander
Method
- Boil chow mein noodles as specified on the packet (around 3 minutes), remove from heat and set aside in another bowl.
- Heat 2 tbsp olive oil in a high edged pan and saute mushrooms and prawns for 1 minute, add lee kum kee soy sauce and worcestershire sauce and saute for a further 2 minutes. Set aside.
- Heat 1 tsbp olive oil to pan and add already blanched green beans, add hot paprika and half of the lemon juice then saute for 1 minute, add cooked chow mein noodles to the pan and stir through.
- Arrange the chow mein noodles in a bowl with prawns and mushrooms on top and finish with fresh coriander, extra olive oil if desired and some more unheated lemon juice. 'Enjoy'
