Ingredients
- 500g pork mince
- 1 egg
- 1/2 cup plain flour
- 1 TSP ground black pepper
- 2 TSP salt
- 2 TSP crushed garlic
- 3 TSP Valcom Thai Red Curry paste (separate)
- Half jar Valcom Thai Red Curry paste
- 1/2 cup tomato soup
- 1 1/2 cups water
- 1 spring onion sliced thin
- 1 carrot diced
- 1 tbsp olive oil
- 2 bundles of vermicelli noodles
Method
- Combine mince, egg, flour, salt, pepper, garlic and (3 tsp) red curry paste together in a bowl. Roll into large meatballs.
- In medium pan heat oil and brown meatballs over medium heat. Add the rest of the red curry paste and cook till fragrant. To the side boil water in a small pot for the vermicelli noodles.
- Cook the noodles. Add carrot and spring onion cook through. Then add the tomato soup and water to make the sauce. Stir through and heat till hot and fragrant. Ready to serve.
