Ingredients
- 2 Lebanese cucumbers
- Gochugaru
- Soy Sauce
- Sesame Oil
- Rice Wine Vinegar
- Salt
Method
- Slice cucumbers, and then smash with the back of the knife. This creates more surface area for the flavours to penetrate.
- Place smashed cucumbers in bowl and sprinkle with salt to cover, and toss to make sure evenly covered. Leave for 4 mins. This draws out excess moisture and enhances the cucumber flavour.
- Pour out excess moisture pooled at the bottom of the bowl and rinse cucumbers.
- Splash with gochugaru, sesame oil, rice wine vinegar and soy sauce to taste.
