Ingredients
- 1/2 - 1 cup jasmine rice, cooked (leftover rice)
- Sriracha to taste
- 1 - 1 1/2 tbsp tamari soy sauce
- 1 tsp sesame oil
- 1 cucumber thinly sliced
- 1 carrot thinly sliced
- Handful of shredded red cabbage
- 1 can tuna
- 2 - 3 tbsp mayonnaise (depending on taste)
- Smoked paprika to taste
- Green onion (to garnish)
- Obento Yaki Nori Sushi sheets
Method
- Combine cooked leftover jasmine rice with sriracha, tamari soy sauce and sesame oil together.
- Spread rice on a parchment lined sheet and bake at 200 celsius for 20 minutes.
- In the meantime, thinly slice your cucumber, carrot and cabbage. Note* You can also add other veggies, such as avocado, radish, peas ect!
- In a bowl, mix together 1 can of tuna, mayonnaise and paprika and set aside.
- Once the rice is crispy, assemble everything together in a bowl and top with your Obento Yaki Nori Sushi sheets (cut in small pieces). Garnish with spring onions.
