Ingredients
- For Meatballs200g Chicken mince
- 100 g salmon mince
- 1 clove of garlic
- 1 tsp ginger
- 1 tsp lemongrass powder
- 60 g coriander chopped
- 1 tsp sesame oil
- For Broth1 tsp sesame oil1 stem of lemongrass white only crushed
- 2 cloves garlic crushed
- 1 stick of cinnamon
- 2 star anise whole
- 3 cloves whole
- 1/2 L chicken stock
- 60ml lime juice
- 1 Birds Eye chilli crushed
- 1 tbs soya sauce
- For Serving
- 100g of OBAP Sweet Potato Noodles
- 1 bunch book choy
Method
- To make Meatballs
- Combine all ingredients for meat balls.
- Marinate for 20 mins.
- Roll into small balls & put on plate.
- Cover & refrigerate.
- To cook
- Heat oil in a large pot.
- Add spices & fry for 2 mins until fragrant.
- Add chicken stock & bring to boil.
- Gently add meatballs & simmer for 15mins.
- Add lime juice stir to mix.
- While meatballs are cooking, cover OBAP Sweet Potato Noodles with boiling water & leave until soft then drain.
- Blanch Bok Choy drain & set aside.
- To serve
- Divide noodles & bok choy into serving bowls.
- Ladle hot soup & meatballs into bowls.
- Garnish with coriander leaves before serving.
