Ingredients
- Black rice (1 packet, bought at Coles)
- Carrots
- Beetroot
- Chinese radish
- Pumpkin
- Spinach
- Mushrooms
- Bitter melon
- Extra virgin olive oil
- Your favourite stock
- Clove of garlic (optional)
- Coriander
- Bikaneri bhujia (can be bought at an Indian store)
Method
- Cut the following ingredients into small pieces: Carrots Beetroot Chinese radish Pumpkin Mushrooms
- Put a table spoon of the olive oil into a frying pan and put in all the cut ingredients from above. Stir fry those ingredients.
- Cut the bitter melon into large slices.
- Add in the spinach and the bitter melon.
- Add in the black rice followed by a dash of some more olive oil.
- Sprinkle the stock powder on top.
- Meanwhile dice up the garlic onto a serving plate.
- When the pan gives off an aromatic smell, transfer the cooked ingredients onto the plate with the garlic.
- Garnish with the coriander and the bikareri bhujia and serve.
