- Capsicums, spring onion, beans, squash, carrots, cashews, garlic, lime and coconut milk
- Prepare veggies, heat up coconut oil and add all veggies (save some of the spring onions for garnish). At the same time in a different pan dry fry the cashew nuts. Grate lime peel and add soya sauce and coconut sugar for flavour. Add coconut milk and bring to the boil. Add lime juice and season. Serve with steamed rice. Garnish with plenty of cashews, spring onion and Thai basil (or coriander).
