- 1 cup TCC Coconut Milk• 4 TBSP chia seeds• 2 TBSP Concentrated Palm Sugar or Gula Melaka Pekat (Dapur Desa Brand)• 1 punnet Blackberries• 1 fresh fig• ½ fresh mango• You can use any fresh fruits you have eg Kiwi fruit, grapes, strawberries, blueberries, bananas topped with sliced almonds, chopped nuts, chocolate, peanut butter etc.
- In this recipe, I had the following fresh figs, blackberries and mangos which went together beautifully. This serves 2. 2. Mix chia seeds into coconut milk and Gula Melaka or Palm sugar concentrate with a spoon till all lumps gone. 3. Cut up mango into 1 cm cubes and small shapes by cutting mango in half and criss cross 1 cm cuts into the flesh and push mango flesh up from skin so that the cubes pop up and slicing off the cubes. 4. Cut figs in half and slice it ½ cm slices. 5. Arrange the fig slices on the inside of the glass near the bottom and press against the glass. 6. Pour or spoon the chia seed mix into the glass till nearly full. 7. Top up with fresh blackberries and mango pieces. 8. Chill in fridge. 9. Enjoy. Can be eaten as a high protein healthy breakfast, dessert or snack.
