Ingredients
- 2 cups Sushi rice
- 3 cups water
- 2T Obento rice wine vinegar
- 2T caster sugar
- 1/2 t salt
- 1/4 cup toasted sesame seeds
- 2 pieces Chicken schnitzel , grilled and cut into strips
- 1 carrot, julienned
- 1 Lebanese cucumber, cut into eight long sticks
- 8 nori sheets
Method
- Rinse sushi rice in pot and drain. Repeat twice more.
- Add water to drained sushi rice. Cover pot with lid.
- Boil on high heat. Once boiling, turn to a simmer for 15 minutes till rice is cooked.
- Turn off heat. Leave rice to stand for 10 minutes.
- Remove pot lid. Add Obento rice wine vinegar, sugar and salt.
- Mix well. Cover pot and stand for 10 minutes.
- Lay sushi nori on sushi mat.
- Place a scoop of rice onto bottom half of nori.
- Add carrots, a cucumber strip and a strip of schnitzel.
- Roll with mat.
- Cut roll into eight pieces. Serve.
