Ingredients
- Yaki Nori sushi sheets
- 2 cups Sushi rice
- Sushi seasoning 250ml
- 3 eggs
- 1 cucumber
- Kewpie mayonnaise
- 300g chicken breast
- Sushi & sashimi soy sauce
Method
- Wash and cook rice
- While the rice is cooking, put chicken breast into a bowl and add a splash of soy sauce and salt and pepper
- In a medium pan, heat up some olive oil and once hot add the chicken breasts
- Cook chicken on one side until golden brown and cooked halfway through, flip chicken to cook the other side
- While the chicken is cooking, cut up the cucumber into circles
- Take the cooked chicken off the pan and let it rest on the side
- Crack eggs into a bowl and scramble them. Once scrambled cook the eggs as a thin omelette
- Once cooked take off and slice eggs and chicken into thin slices and put aside for toppings
- Once rice is cooked, add in sushi seasoning and mix through the rice. Once mixed, put into a bowl to serve
- Get Yaki Nori Sushi sheets and cut at the halfway point a line from one end to the middle.
- Prepare the Sushi Sandwich. With the cut facing towards you. start with the bottom right quarter then go anti clockwise putting toppings until you reach the bottom left. Start by placing a thin layer of rice, chicken, cucumber and then egg. Put kewpie mayo over chicken for extra flavour.
- Complete the sandwich. Fold the rice onto the chicken, then onto the cucumber then the egg and then enjoy!
