Sushi Taco

Ingredients
- Obento Yaki nori for sushi
- 750g cooked sushi rice
- 3 tablespoons rice wine vinegar
- 500g chicken tenderloins
- 2 tablespoons honey
- 2 tablespoons tamari
- 1 tablespoons cornflour
- 1/4 cup water
- Diced salad eg. tomato, cucumber, lettuce, red capsicum

Method
- Fry chicken tenderloins until browned.
- Add honey and tamari to chicken and stir to combine. Mix cornflour with water and add to sauce mixture.
- Take a sushi wrapper and trim corners to make it a circle shape. Add rice wine vinegar to sushi rice. Add a couple tablespoons of sushi rice to sushi wrapper and spread evenly over wrapper. Spray a light covering of oil over rice.
- Fold wrapper in half to make a taco shape and stack next to each other in airfryer basket. Cook for 6 minutes at 180 degrees.
- Whilst they are cooking cut up salad items. eg tomato, lettuce, red capsicum and cucumber.
- Top cooked sushi wrappers with chicken, salad, sweet soy or sweet chilli sauce and Japanese style mayo.
- Pickup taco and enjoy.
