Ingredients
- 4 chicken thighs cubed
- 1 large carrot sliced
- 1 red capsicum diced
- 1 large red onion diced
- 1 can pineapple (keep juice)
- 1 Tbsp crushed garlic
- 1 Tbsp crushed ginger
- 1 Tbsp sesame oil
- 1/4 cup tomato sauce
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 2 Tbsp oyster sauce
- 1 Tbsp corn flour
Method
- To make sauce, whisk juice from pineapple, 1/4 cup tomato sauce, 1/4 cup apple cider vinegar, 1/4 cup water, 2 Tbsp oyster sauce and 1 Tbsp corn flour
- In a hot pan, sizzle garlic and ginger for 30 seconds in 1 Tbsp sesame oil.
- Add chicken, cook until white.
- Toss in veg and pineapple pieces, cook until veg is just starting to soften; about 2 minutes.
- Pour in the sauce and boil for a minute until the sauce thickens slightly.
- Serve on steamed rice
