Ingredients
- 420g can corn kernels, drained
- 1/2 cup plain flour
- 2 eggs, lightly beaten
- 2 spring onions, chopped
- 1 tbsp finely chopped fresh chives
- olive oil, for frying
- 1 avocado, diced
- 1 tbsp lemon juice
- 1/2 red capsicum, finely chopped
- 1/2 small red onion, finely chopped
- 1 tbsp chopped fresh coriander leaves
- 1 tbsp ABC Extra Hot Chilli Sauce
- 1 tbsp Sweet Chilli Sauce
- Mixed salad greens and extra coriander, to serve
Method
- Combine corn, flour, eggs, chives and onion in a bowl.
- Heat oil in a large, non-stick frying pan over medium heat. Using 1 tablespoon mixture per fritter, cook 8 fritters for 4minutes each side or until golden and cooked through. Transfer to a plate lined with paper towel. Repeat with remainingmixture to make 16 fritters.
- Make avocado salsa: Combine avocado and lemon juice in a bowl. Add capsicum, onion, coriander, sweet chilli sauce and ABC Extra Hot Chilli Sauce. Stir to combine.
- Serve fritters topped with avocado salsa, extra chilli sauce and coriander leaves, with a side of fresh greens.
