Ingredients
- For the seasoning -6 tbsp obento tonkatsu sauce -4 tbsp tahini paste -2 tbsp chilli oil For the meat -2 tbsp chilli oil -4 cloves garlic chopped -1 TSP ginger chopped -1 tbsp miso white bean paste -1 tbsp oyster sauce -500 grams pork mince -3tbsp rice wine For the soup - 2 cups soy milk - 1 cup water - 4 chicken stock cubes For noodles and toppings - 1 baby Bok Choy, bottom piece cut off -Handfull beansprouts -2 portions ramen noodles (fresh, frozen or dried) - 2 green onions, chopped - 1 soft boiled egg cut in half -sesame seeds -4 pieces pork belly rashions
Method
- Step 1 Prepare 4 soft boiled eggs and set aside Step 2 Mix all the ingredients for seasoning sauce and use half to baste the pork belly rashions. Set aside the rest of the sauce Step 3 Place the pork belly rashions in the airfryer at a temperature of 190 degrees for a total of 20 minutes turning them over half way into it. Step 4 In a medium pot, combine water, soy milk and chicken stock cubes. Cover and bring it to light simmer. Keep an eye on it as it can boil over. Bring another pot of water to boil. Step 5 Heat a large pan over high heat, add chili oil, garlic and ginger. Stir fry for 30 seconds or until you can smell the garlic, then add miso white bean paste and oyster sauce. Stir fry for 45 seconds to 1 minute then add ground pork. Break down pork and stir fry with sauce, about 1 minute. Add rice wine and stir fry for 3 to 4 minutes or until there’s no moisture and pork is fully cooked. Remove from heat and keep it warm. Step 6 Add a good amount of salt into boiling water then add bok choy and blanch for 1 minute. Remove from water, drain and set aside. Add handful of beansprouts and blanch for 2 minute. Remove from water, drain and set aside. Step 7 Drop noodles into the same boiling-water, cook by following the directions of package you’re using. Cook 1 portion at a time if you are using fresh/frozen noodles. Meanwhile noodles are cooking (about 1 to 2 minutes for fresh/frozen noodles), combine seasoning sauce and soup while simmering. Step 8 Drain noodles and add into bowl. Stir noodles to coat evenly with broth and arrange them. Top ramen with bean sprouts, bok choy, stir-fried pork, pork rashion, extra chili oil if desired, soft boiled egg, chopped green onions and sesame seeds
