Ingredients
- Sushi rice
- Vinegar
- Chicken teriyaki (home made)
- Avocado
- Nori seaweed wrappers
- Wasabi
- Kewpie mayo
- Chicken katsu (homemade)
- Pickled ginger
- Cucumber
Method
- Cook chicken with homemade teriyaki sauce and shallow fry chicken in breadcrumbs and curry powder create your chicken katsu
- Cook white sushi rice in pot with 1 teaspoon rice wine vinegar and 1 tablespoon mirin or sugar.
- Using bamboo rolling mat place 1/2 cup cooked sushi rice in nori seaweed wrapper, add choice of chicken, avocado, thinly sliced cucumber sticks. Gently roll up sushi and using warm water seal the edge to complete the roll. Do this with any fillings you desire. Once completed serve with kewpie mayo, fresh wasabi, pickled ginger and soy sauce. Using a wet knife, gently cut roll into bit sized pieces and enjoy!
